Healthy Spring Dinner Recipes

We’ve been covering healthy spring recipes the past few weeks (loving these breakfasts and lunches) but there’s nothing I love more than wrapping up a good workday, turning on some music, making a healthy spring dinner recipe, and heading out to the patio to enjoy the sunset and debrief about the day with my boo. 1. FISH TACO BOWLS

Living in Seattle, fish tacos are on heavy rotation in my household. I especially love them paired with coleslaw, because in one creamy, delicious addition to the meal, you get a few different kinds (and colors!) of veggies. I love how this recipe by Design Love Fest pairs the tacos with rice instead of the typical taco shells, but I also love piling high a bed of coleslaw, and making a salad out of the recipe too. Delicious!

2. PARMESAN PISTACHIO KALE SALAD

I crave a good caesar salad just about weekly. This recipes by How Sweet Eats spins the typical caesar into a richer, more nutrient-dense version by pairing it with pistachios and big green kale leaves instead of iceberg lettuce. It would be delicious lightly charred on the grill or paired with wild salmon.

3. ROASTED VEGGIE CAULIFLOWER PITAS WITH AVOCADO CREMA

I recently made my first cauliflower pizza crust and have since been trying to turn cauliflower into just about any kind of dough I can imagine. It makes the perfect healthier fix for a pizza or bread craving. These pretty little pitas by Paleo Gluten-Free Eats are creamy, full of flavor and surprisingly filling.

4. SOUTHWESTERN SUPERFOOD SALAD

Could this meal be any prettier? This recipe by Camille Styles combines fresh produce, bright colors and lots of healthy fats to make a salad that’s worthy of dinner. I think it’s one of those meals that would be perfect for dinner guests — this salad, grilled chicken, some crisp white wine and a warm sunset. Perfection.

5. ROASTED GREEK CHICKEN SALAD WITH OVEN FRIES

What I love most about this recipe by Half-Baked Harvest are the textures. Crunchy cucumber, hearty grains, crisp butter lettuce, juicy tomatoes, and warm potatoes… Not only is it beautiful, but every bite is basically a celebration of spring.
