About a month or two into my business, I was asked if I could cater healthy appetizers for a 200-person networking event. You know, just a little thang. I had never catered literally anything in my life before, but that’s the nature of starting a business: you find yourself in all kinds of funny situations, doing things you never imagined doing or knew you could do, saying yes to the craziest of opportunities just to see what works. So as you might guess, my answer was a casual, cool, “Totally!” Gulp.
I decided to make these antipasto skewers because they were a decidedly healthy and easy appetizer. If I was going to make 200 of anything in my non-industrial kitchen, let alone an entire spread of other appetizers along with it, the food really had to live up to its name as an easy appetizer. But that’s what it did, and that’s what I did, spread out across my small home kitchen countertops, covered with jars of artichokes and olives, skewers piled high to eye level.
All that to say, if you’re looking for an easy appetizer that is both healthy and delicious, these antipasto skewers fit the bill. You can swap in different ingredients based on what you have at home or what you like like the taste of — like mozzarella pearls, parmesan, feta, sundried tomatoes, spinach, pepperoni, or prosciutto. But I like the mix of olives, salami, and artichoke hearts; it’s simple, classic, delicious, and oh-so-easy. And it’s full of healthy fats, protein, and fiber, which is always the winning combo for feeling full and satisfied after eating. I hope from here on out, these antipasto skewers make you think of dreaming big, taking risks, and trying new things… like they do for me. 🙂
Antipasto Skewers
Ingredients
Cheese: mozzarella pearls, sharp cheddar, hard parmesan, or feta
Meat: salami, pepperoni, ham, or prosciutto
Veggies: artichoke hearts, cherry tomatoes, spinach, sundried tomatoes, black or green olives
Toothpicks
Directions
Assemble skewers by alternating ingredients on a toothpick. It’s as simple as that!
